Warm Squash Spiral & Spinach Salad

    Heat oven to 400 F

    Spread butternut squash spirals on a parchment lined baking sheet, drizzle with 2 Tbsp of olive oil and bake for 10 minutes

    Place 50 g of the prosciutto on each plate

    Divide the squash among the four plates, top with the leafy greens, drizzle with olive oil and balsamic

    Sprinkle with pecans and shaved parmesan cheese

    Serve while the squash is still warm
