Harvest Fresh Rainbow Salad with Zucchini, Carrot and Beet Spirals and a Simple Vinaigrette

Cooking Time 10 minutes (chill)

    Mix the balsamic vinegar, olive oil, mustard, salt and pepper to make a dressing or use your favourite vinaigrette. *You should use a vinaigrette, so the vinegar can tenderize the spirals. Mix the spirals with the dressing and let sit in the fridge for 10-15 minutes.
    Plate the salad and top with sweet peppers and feta cheese.
    Note* You can also add some toasted pecans, sunflower seeds or croutons or add your own twist!
