Harvest Fresh Rainbow Salad with Zucchini, Carrot and Beet Spirals and a Simple Vinaigrette

Ingredients
- 1/3 package Harvest Fresh Zucchini Spirals
- 1/3 package Harvest Fresh Carrot Spirals
- 1/3 Package Harvest Fresh Beet Spirals
- ½ yellow or red pepper, sliced
- 1 cup feta cheese crumbled (*optional)
- 2 Tbsp Balsamic vinegar
- 2 Tbsp Olive oil
- 1 tsp Dijon mustard
- Salt and pepper to taste
Directions
- Mix the balsamic vinegar, olive oil, mustard, salt and pepper to make a dressing or use your favourite vinaigrette. *You should use a vinaigrette, so the vinegar can tenderize the spirals. Mix the spirals with the dressing and let sit in the fridge for 10-15 minutes.
Plate the salad and top with sweet peppers and feta cheese.
Note* You can also add some toasted pecans, sunflower seeds or croutons or add your own twist!
