Orzo, Meatball and Harvest Fresh Zucchini Soup

    1 pack Harvest Fresh Zucchini Spirals

    2 tsp Olive oil

    1 onion, grated

    1 clove garlic, finely grated or pressed

    6 cups sodium-reduced chicken broth

    1 cup orzo

    12-14 soy-glazed meatballs (Pre-cooked), find the recipeĀ Here!

    1 tsp lemon zest

    2 Tbsp lemon juice

    1/4th tsp pepper

    2 tsp sodium reduced soy sauce (optional)

    In a large saucepan, heat olive oil over medium heat. Cook onion and garlic until fragrant, about 30 seconds to 1 minute.
    Increase heat, add broth, and bring mixture to a boil.
    Add orzo, reduce heat to medium and simmer, uncovered, until orzo is al dente, about 8-10 minutes
    Stir in Harvest Fresh Zucchini Spirals, soy-glazed meatballs, lemon zest, lemon juice and pepper. Simmer until heated through, about 2-3 minutes.
    Add Soy sauce, and serve!
    For a fun substitution, replace the Orzo with Harvest Fresh Riced Butternut squash!
