Loaded Sweet Potato Spiral Nest

    • 1 container Harvest Fresh sweet potato spirals
    • Sour cream
    • 4 slices bacon, cooked until crisp and chopped coarsely
    • Chopped chives to taste
    • Olive oil
    • Salt and fresh ground pepper, to taste
    Preheat oven to 450
    Prepare a baking sheet covered with parchment paper
    Divide the spirals in 4 equal piles on the baking sheet and arrange them into the shape of a baked potato
    Drizzle with olive oil and sprinkle with salt and pepper
    Roast in oven for approx 15 minutes, edges will get a bit crispy, if mounds are too dense in the middle thin it out a little and push back into half baked potato shape when done
    Remove from oven and let stand for 5 minutes to let steam evaporate
    Dress spiral baked potato to taste with dollops of sour cream, sprinkled chopped bacon and chopped chives
