Harvest Fresh Spinach with Seared Scallops

    Spray the pan with cooking spray. Heat large pan on high.
    For Scallops:
    Add salt and pepper, and add scallops to the pan and cook for 2 minutes.
    Turn over and cook for 1 minute.
    Remove the scallops from the pan and keep warm.
    In a pan, add oil, onions, chilli (optional) and cook for 2 minutes. Add garlic and cook 2 minutes.
    Add the spinach in small batches, and stir until it wilts prior to adding remaining.
    Once wilted, place the spinach on a serving plate and then place your seared Scallops on top. Add the lemon wedges.

    Tip: The trick to perfect scallops is to leave them alone once they hit the pan. Scallops will stick to the skillet at first then release once they sear.
