Harvest Fresh Spinach Pizza with Cipolline Onion

    1 of 284g bag of Harvest Fresh Spinach
    1 of 284g bag of Harvest Fresh Cipolline Onion, peeled and sliced
    1 tbsp butter
    1 thin crust pizza crust or pizza dough
    2 tsp honey
    2 tsp balsamic vinegar
    Salt and pepper, to taste
    1 – 2 cups shredded cooked chicken breast
    4 oz chorizo sausage sliced into thin rounds
    1/4 – 1/3 cup BBQ sauce
    1- 1/2 cups shredded cheese, mozzarella or cheddar
    1 tbsp olive oil

    In a sauté pan, melt the butter. Add Harvest Fresh Cipolline onions and cook for 10 – 15 minutes until nicely browned. Stir in the honey and balsamic vinegar. Season with salt and pepper and cook for 10 minutes longer. Set aside.

    Fill a medium pot with an inch of water, bring to a boil, place Harvest Fresh spinach in pot and let wilt, remove and drain. Once cooled down, squeeze out excess water, while trying to leave spinach in large pieces, set aside

    Preheat oven to 450F

    In a bowl, combine the chicken and BBQ sauce. Set aside

    If using a fresh pizza dough, on a lightly floured surface, roll out the dough into a 12” circle. Transfer to baking sheet

    Brush the surface of pizza dough/crust with small amount of olive oil

    Spread the caramelized onions over the surface of the dough or pizza crust. Arrange the spinach evenly over entire surface, then add chorizo slices and chicken. Next, sprinkle the cheese all over.

    Bake for 10 – 12 minutes

    Finish with broiling for an additional 2 minutes.
