Harvest Fresh Simple Veggie Spiral Marinara with Broccoli Florets and Chicken Meatballs

Ingredients
    • 1 Pack Harvest Fresh Carrot Spirals (can be substituted with any HarvestĀ  Fresh Spirals!)
    • 1 Pack Harvest Fresh Kohlrabi Spirals (can be substituted with any Harvest Fresh Spirals!)
    • 1 Pack 340g Harvest Fresh Broccoli Florets
    • 1 Jar of your Favorite Marinara sauce

    For the meatballs:

    • 1 LBS Lean Ground Chicken (92% lean or higher for best results!)
    • 1/2 cup finely chopped onion
    • 1 large egg
    • 4 Tbsp Panko Breadcrumbs
    • 1 tsp. Garlic Powder
    • 1 tsp. Onion Powder
    • 1/2 tsp. Black pepper
    • Dash of cayenne pepper, or more to taste (Very Spicy!)
Directions
    For the meatballs:
    Pre-heat oven to 400F and prepare a large baking sheet with parchment paper. Set aside
    In a large bowl, mix the chicken meatball ingredients and fold to combine, or mix using your hands
    Once mixed, use a scooper or Tablespoon and scoop some of the mix out into the palm of your hands, and roll into balls. Place each ball on the prepared baking sheet
    Bake for 25 minutes, turning the chicken meatballs once half way through
    For the pasta:
    Bring a large pot of water to boil , and add Broccoli florets. Blanch for 2-3 minutes. Drain the hot water and transfer to Ice bath to stop cooking (you can continue to let them steam, however the florets will loose their crunch!)
    In a large wide saucepan, heat the marinara sauce. Once heated through, add Harvest Fresh Carrot and Kohlrabi Spirals and heat through for approx 5-7 minutes. They will be "al dente"
    Add Broccoli Florets and warm through.
    Serve in a bowl, and top with meatballs if desired! Enjoy!
