Harvest Fresh Kale Caesar Salad and Buffalo Drumsticks Served with rice

    • 1 egg yolk
    • 1 Tbsp Worcestershire sauce
    • 1 Tbsp Dijon mustard
    • ½ lemon freshly squeezed
    • 2 chopped Harvest Fresh Gourmet Garlic cloves
    • ½ cup good quality olive oil

    Buffalo Drumsticks

    • 2 pounds of Drumsticks
    • ¾ cup all-purpose flour
    • ½ tsp cayenne pepper
    • 2 chopped Harvest Fresh Gourmet Garlic cloves
    • ½ tsp salt
    • ½ tsp pepper

    Buffalo Sauce

    1. ¾ cup hot sauce
    2. 2 Tbsps. hot sauce
    3. 1 Tbsp. honey
    4. 1 Tbsp soy sauce
    5. ½ tsp of salt
    FOR CAESAR DRESSING AND HARVEST FRESH KALE SALAD. In a small food processor add all salad dressing ingredients except olive oil, process until smooth then slowly add olive oil, Season with salt and freshly ground pepper to taste. Next empty HARVEST FRESH KALE into large bowl. Slice thin ½ HARVEST FRESH RED PEARL ONION and add to kale. Add Caesar dressing and massage into kale to evenly coat, break down and soften kale. Hard boil 2 eggs, peel and chop and add to salad. Add grated fresh parmesan and Season with freshly ground pepper.

    FOR BUFFALO DRUMSTICKS. Place the flour, cayenne pepper, the 2 chopped HARVEST FRESH GOURMET GARLIC cloves and ½ teaspoon of salt in a large Ziploc bag. Shake to mix well. Add the dried drumsticks to the bag with the flour mixture and toss until well coated. Remove drumsticks, shaking off any excess flour coating, and place them on a cooling rack. Place the prepared wings in the refrigerator, uncovered, for at least one hour. Preheat the oven to 400 degrees. Bake the wings for 25 minutes. Remove from the oven, turn each wing over and return to the oven. Bake for an additional 25 minutes. Meanwhile, whisk together the melted butter, hot sauce, honey, soy sauce and ½ teaspoon of salt in a small bowl. Remove the wings from the oven and dip them 3 or 4 at a time in the sauce mixture. Return the coated drumsticks back on the pan, return the pan to the oven and cook for an additional 6-7 minutes then remove from the oven.

    Place the Harvest Fresh Kale Caesar Salad on a serving dish with the baked buffalo drumsticks serve with rice. Enjoy!
