Harvest Fresh Fish Sandwich

one bag Harvest Fresh Kale Slaw
1 tsp. Salt
1 tsp. Ground Cumin
1 tsp. dried Oregano
1 tsp. Hot Paprika
2 1/4 cups Club Soda
2 Cups All purpose flour, plus a little more to dredge fillets
Four 6oz. skinless Haddock fillets
Vegetable oil (for frying)
4 Kaiser Rolls, split and toasted
4 large lettuce leaves
Sauce or dressing of your choosing (eg. Tartar sauce, Pico de Gallo or other!)
Salt and Pepper to taste
- Fill a large bowl with Ice Water
in a seperate smaller or medium size bowl, mix the flour and salt together. Whisk in the club soda until batter is smooth. Set the bowl in the larger Ice bath and let batter stand until chilled (about 10 minutes)
Meanwhile, in a small bowl, combine the cumin, oregano and paprika. Season the Fish with the spice mixture, and some salt and pepper.
In a large, deep, skillet, Heat about 2 inches of vegetable oil to 350F.
Working two fillets at a time, dredge the fish in flour, and shake off any excess. Dip the fillets in the batter, and place in the oil to fry for about 2 minutes per side. Transfer to a rack or Paper towels to let excess oil drain.
To Plate, arrange the Kaiser rolls on a work surface, cut sides up. Top the bottom halves with the lettuce, fried fish and Harvest Fresh Kale Slaw. On the top half, add your favorite sauce or dressing (Tartar sauce for example!)
