Harvest Fresh Chopped Kale Soup with Chickpeas and Hot Italian Sausage

    1 of 284g bag of Harvest Fresh Chopped Kale
    2 cloves of Harvest Fresh Gourmet Garlic
    1 Harvest Fresh Baking Potatoes
    1 onion
    olive oil
    1 x 14 oz can chickpeas
    1 sprig rosemary
    2 sprigs fresh thyme
    1 fresh bay leaf
    4 cups low sodium chicken stock
    4 hot Italian sausages
    Fresh grated parmesan (optional)

    Peel and finely slice the Harvest Fresh Gourmet garlic and onion, then put into a casserole pot on medium heat with 1 tablespoon oil and a splash of water. Cook for 10 minutes or until softened, stir often.

    Meanwhile chop the unpeeled Harvest Fresh Baking potatoes into ¾” dice. Drain the chickpeas. Tie the rosemary; thyme and bay leaf together with kitchen string then stir into pot with the chopped potatoes and chickpeas. Cover with the stock, bring to a boil, then reduce to a simmer for approx 20 -30 minutes or until potatoes are cooked through.

    Remove the herb bunch from the pot then add Harvest Fresh chopped kale and submerge for 10 minutes. Remove from heat. Finely slice the sausage and gently fry in a pan on medium heat until golden. Then, add to the soup with the pan drippings for extra flavour.
