Harvest Fresh Cauliflower Jollof Rice

    1 Pack Harvest Fresh Riced Cauliflower

    1 1/2 tsp garlic powder

    1/2 tsp ginger, ground

    1 1/3 Tbsp Onion Powder

    1 1/3 Tbsp Thyme, dried

    1 1/2 tsp Chile Pepper

    1 tsp Curry Powder

    1 1/2 tsp salt

    2 bay leaves

    2 red bell peppers, medium, coarsely chopped

    2 ripe tomatoes, medium, coarsely chopped

    1/2 red onion, medium, coarsely chopped

    1/2 scotch bonnet pepper, medium, coarsely chopped (remove seeds to reduce heat)

    1/2 cup vegetable oil



    Place chopped peppers, tomatoes, onion and hot pepper in a blender and puree
    Heat vegetable oil in a heavy bottom saucepan until shimmering. Add garlic powder, ginger, bay leaves, thyme, Chile Pepper, Curry powder, and salt. Stir to combine on medium heat for 1-2 minutes.
    Add the pureed vegetables, and let thicken on medium-low heat for about 5-10 mins
    Finally, add riced Cauliflower and cook for another 10 minutes or so until softened.
    Serve in a bowl with fresh thyme sprigs and any additional protein if desired.
