    • TIP:  For the baking of the Omelette Bites, a Silicone Cup Cake Pan gives you the best cooking results.
    Preheat your oven to 350°F.
In a saucepan, bring water to a boil and cook your broccoli until just tender.
Remove from the stove and drain the broccoli and let cool.
Once cool, coarsely chop the broccoli into small pieces.
Add 1/2 tsp of the olive oil to the broccoli pieces and season with salt, to desired taste.
Beat eggs in a bowl until both the yolks & whites are fully blended.
Add the onion powder, a bit of salt and pepper and whisk.
Using a cupcake pan, spray the pan with cooking spray.
Divide & spread the chopped broccoli pieces on the bottom of the cupcake pan.
Pour your egg mixture over the broccoli.
Fill the cups ¾ full to the rim and top with cheese.
Bake for 20 to 25 minutes, or until the tops of the muffins are a golden brown and when testing for doneness, place your finger on the top of the muffin and if the top bounces back when pressed down upon, it is ready.
    Let cool before removing.
