General Tso’s Chicken with Harvest Fresh Snow Peas

    • 1 ½ cups basmati rice
    • 4 ½ tbsp cornstarch
    • 5 of 170g bag of Harvest Fresh Snow Peas, cut in half
    • Harvest Fresh Gourmet Garlic, sliced
    • 2 tsp fresh ginger, grated
    • 3 tbsp brown sugar
    • 3 tbsp light soy sauce
    • a pinch of red chili pepper flakes to taste
    • 2 large egg whites
    • ½ tsp salt and ¼ tsp pepper
    • 1 ½ lbs boneless, skinless chicken breasts, cut into 1” pieces
    • 2 tbsp vegetable oil
    Prepare your rice and set aside

    Mix together 1 ½ tbsp cornstarch and 3/4 cup water.

    In a large mixing bowl mix together snow peas, garlic, ginger, sugar, soy sauce and red pepper flakes. Add cornstarch slurry from Step 2, mix well and set aside

    In another bowl whisk together the egg whites. Add 3 tbsp cornstarch, ½ tsp salt and ¼ tsp pepper. Add cut chicken and toss to coat.

    In a large non stick pan heat 2 tbsp vegetable oil over med-high heat. In batches, cook chicken, turning occasionally until golden for approx 8 minutes (4 minutes per side). Remove and set aside.

    In the same pan, add snow pea mixture from Step 3. Cover and cook until snow peas are tender and sauce has thickened, for approx 4 min. Return chicken to pan. Serve over rice.
