Cauliflower Pizza Crust

    One package Harvest Fresh Riced Cauliflower 1 large egg 1 1/2 cup shredded mozzarella cheese, divided 1/2 cup shredded cheddar cheese 2 tbsp freshly grated Parmesan 1/2 cup pizza sauce 1/2 cup shredded turkey slices or pepperoni mini slices 1/4 cup fresh basil leaves 1/2 tsp crushed red pepper flakes (optional) 1 tbsp dried basil 1 tbsp dried oregano Kosher salt and freshly ground black pepper, to taste
    Preheat oven to 425 degrees F, and line a baking sheet with parchment paper Place the Harvest Fresh Riced Cauliflower into a microwave-safe bowl, and microwave for 4-5 minutes or until softened; let cool Using a clean dishtowel or cheesecloth, drain the cauliflower completely, and squeeze out as much water as possible Transfer the cauliflower to a large bowl, and stir in egg, 1/2 cup mozzarella, Parmesan, Italian seasonings and season with salt and pepper, to taste Spread Cauliflower mixture into a 15 x 10 inch rectangle onto the prepared baking sheet. Spray lightly with non-stick spray and bake for 12-15 minutes, or until golden Top with pizza sauce, remaining cheeses, turkey, and pepperoni. Place into the oven and bake until the cheese has melted, about 10 mins. Sprinkle with basil and (optional) red pepper flakes Serve Immediately!
