Zucchini Spirals with Pesto

Cooking Time

    • 1 package Harvest Fresh Zucchini Spirals
    •  1 cup fresh basil leaves
    •  2 tablespoons pine nuts
    •  1 garlic clove, crushed
    • 2 tablespoons Romano cheese (can also use parmesan cheese)
    •  1/4 cup extra-virgin olive oil
    • Salt and pepper to taste
    • Shaved parmesan cheese, to garnish
      Cherry tomatoes, optional
    Toast pine nuts in a saucepan or skillet on medium0low heat, stirring constantly for about 3 minutes, be careful not to burn pine nuts.

    Cook zucchini spirals by saute in a saucepan or blanch for 1-2 minutes, or eat them fresh if you

    Meanwhile, place basil, pine nuts, garlic and cheese in a food processor and chop

    Using the opening in the food processor add oil in a slow, steady stream while the processor is still running. Process until smooth. Season with salt and pepper.

    Add pesto to pasta. Toss to combine. Serve with shaved parmesan and sliced cherry tomatoes. For some added flavor try roasting the cherry tomatoes or make blistered cherry tomatoes
