Zucchini Spiral Greek Salad

Cooking Time 10 minutes (chill)

    • 1 package Harvest Fresh Zucchini spirals
    • 1 cup grape tomatoes, halved
    • ½ cup Kalamata olives, pitted
    • ¼ cup crumbled feta
    • ¼ cup lemon juice, or juice of 1 lemon
    • 2 Tbsp olive oil
    • 1 Tbsp balsamic vinegar
    • 1 tsp fresh oregano, chopped
    • Salt and pepper to taste
    Squeeze the lemon juice over the zucchini spirals and let sit in the fridge for about 10 minutes

    Cut the cherry tomatoes in halves and cut the olives in half as well if you like

    Mix the olive oil, balsamic and fresh oregano together to make a dressing

    Toss all the ingredients together and season with salt and pepper to taste
