Sweet Potato and Leek Soup

Ingredients

    Harvest Fresh Cubed Sweet Potato (400g)

    Harvest Fresh Shredded Leeks (227g)

    25g Butter

    Chicken or Vegetable Stock, 400ml

    Ground Black Pepper

    4 Thick Slices of bacon (optional)

    Chives for Garnish

Directions
    Heat soup Pot to medium, and melt butter
    Saute the Leeks in the butter for 5 minutes
    Add the stock and sweet potato, and bring to a boil
    Simmer for 15 minutes, until the sweet potato is soft and cooked
    Season the mix with Black Pepper to taste and cool
    Place the mix in a food processor and blend until smooth
    Return to pot, and heat until desired temperature is reached. If necessary, use a little water to thin to desired consistency (add slowly!)
    (Optional) Grill the bacon until crispy, chop into bite size pieces, and use for garnish!
    Garnish with Chives, and serve
