Kale Super Salad in Wonton Cups

    For Salad

    • 1 bag Harvest Fresh Kale super blend mixed salad
    • 2-3 green onions sliced thinly on a diagonal
    • ½ lb snap or snow peas, cut on a diagonal
    • 1 rotisserie chicken, breast meat shredded
    • 1 can mandarin orange segments in light syrup, drained
    • 2 cups chow mein noodles, uncooked
    • 1 cup sliced almonds, toasted or unsalted roasted cashews (optional garnish)

    For Salad Dressing

    • 1/2 cup rice wine vinegar
    • 1/4 cup light sesame oil
    • 4 teaspoon mustard
    • 2 teaspoons soy sauce
    • Salt & freshly ground black pepper
    • 1/4 cup peanut oil

    For Wonton Cups

    • 12 Wonton wrappers
    • Olive oil for brushing
    You can eat this just as a salad as your main or you can fill wonton cups with the salad and serve as an appetizer or hors d'ouevre ! It is also a great way to use leftover roast chicken!

    Preheat the oven to 375 F for the the wonton cups.
    Brush each wonton wrapper on one side with olive oil, gently press into muffin tray, olive oil side facing down
    When oven is ready bake the wonton cups for 7 – 10 min or until they are crispy and golden,, allow cups to cool

    Meanwhile prepare the salad and dressing
    Combine all salad ingredients together except oranges and nuts, use those for garnish on the plate or cups

    For Dressing: Combine all ingredients in a small bowl and whisk together to combine. Set aside, do not dress the salad until ready to serve.

    When ready to serve toss the salad with the dressing until evenly coated

    Fill each wonton cup with some salad and top with mandarin orange segment and toasted almond slices
