Kale Caesar Cocktail

Ingredients
    • For the CaesarĀ Harvest Fresh Pearl Onions, Pickled (ingredients below)
      Kale Ice Cubes (ingredients below)
      Caesar Mix
      Hot Sauce
      Worcestershire Sauce
      Caesar Rim
      Celery Stick
      Lime Wedges
      Horseradish
    • For the Pickled Onions
    • 16 Harvest Fresh white pearl onions (about 1 cup), root ends trimmed and scored with an X
    • 1/2 cup water
    • 1/2 cup red wine vinegar
    • 1/2 cup sugar
    • 1 1/2 tablespoons mustard seeds
    • 1/2 teaspoon coriander seeds
    • 1/2 teaspoon black peppercorns

    For the Kale Ice Cubes

    4 oz Harvest Fresh Chopped Kale
    enough water to liquify hte kale

     

Directions
    For the Pickled Onions
    In a medium saucepan of boiling salted water, cook the pearl onions until just tender, about 8 minutes. Drain, rinse under cold water and drain again. Transfer the onions to a glass bowl.
    Meanwhile, in another medium saucepan, bring the water and vinegar to a boil with the sugar, mustard seeds, coriander seeds and peppercorns. Boil until the sugar is dissolved, about 2 minutes. Pour the liquid over the onions and refrigerate for at least 1 hour and up to 2 days. Drain before serving

    For the Kale Ice Cubes
    Puree/ liquify the chopped kale in a blender with enough water to make the mixture smooth and pourable but still thick. You may want to add a splash lemon or lime juice to this mixture as well, but ti is optional

    For the Caesar
    Assemble your Caesar to your preference
    Run a lime wedge along the rim of the glass and dip the rim into the caesar rim spice
    fill the glass half full with regular ice then top with a few cubes of kale ice, add a dash or two or more of hot sauce and worcestershire and some grated horsradish
    Add desired about of vodka (optional)
    Fill with Caesar Mix
    Garnish with pickled onions, celery, and lime wedge
