HARVEST FRESH ZUCCHINI AND SWEET POTATO SPIRALS WITH SHRIMP AND LEMON

Ingredients
    • 1 package HARVEST FRESH zucchini and sweet potato spirals
    • 3 tbsp olive oil
    • 1 tsp crushed red pepper flakes
    • 1 lb peeled and deveined shrimp
    • 3 cloves garlic, sliced thin and divided
    • Pinch salt and fresh black pepper
    • 1 lemon
    • 1 cup halved grape tomatoes (optional)
Directions
    Heat a medium nonstick skillet over medium-high heat.
    Add 2 tbsp of the oil and crushed red pepper flakes, and the shrimp and season with pinch salt and pepper. Cook 2-3 minutes.
    Add half of the garlic and continue cooking 1 more minute, or until the shrimp is cooked through and opaque. Set aside.
    Add the remaining tablespoon of oil and garlic to the pan, cook 30 seconds
    Add the sweet potato noodles and cook approx 3 -5 minutes until softened.
    Add the zucchini noodles and cook together for additional 1 – 2 minutes, until softened.
    Add the shrimp and (optional) tomatoes to the pan and squeeze the lemon over the dish. Remove from heat and serve!
