HARVEST FRESH SWEET POTATO KALE TACOS

Ingredients
    • 3 tablespoons olive oil
    • 1 Harvest Fresh Purple Sweet Potato, peeled, grated
    • Harvest Fresh Gourmet Garlic clove, finely chopped
    • 1 Harvest Fresh Red Thai Chili, deseeded and chopped finely
    • 1 Bag Harvest Fresh  Chopped Kale
    • 2 tablespoons fresh lime juice
    • Cilantro
    • Kosher salt, freshly ground pepper
    • 4 corn tortillas, warmed
    • 1 avocado, thinly sliced
    • Sour cream to taste
    • Rotisserie chicken shredded
    • Optional roasted corn
Directions
    Heat oil in a medium saucepan over medium heat. Cook Sweet Potato, garlic and Red Thai Chili stirring often, until potato is tender and just beginning to brown, 8–10 minutes. Add kale and cook, tossing often, until kale is wilted and tender, 8–10 minutes.


    Add lime juice and season with salt and pepper.


    Serve sweet potato and kale mixture on tortillas, topped with sliced avocado and handful shredded rotisserie chicken topped with sour cream
