Ingredients

    ¾ of 227g bag of POP-I Spinach, chopped
    ¾ of 284g bag of Harvest Fresh chopped kale
    4 Harvest Fresh POP-I radishes, thinly sliced
    1/4 English hothouse cucumber, thinly sliced
    1/2 cup grated Harvest Fresh Sweet Nantes carrot
    1 package extra-firm tofu, cubed and sautéed in vegetable oil till crispy
    2 tablespoons sesame miso vinaigrette (recipe below)
    2 teaspoons spiced pepita and cashew crunch (recipe below)

Directions
    Toss greens, radishes, cucumber, carrot, tofu, and dressing together in a large bowl. Top with Spiced Pepita and Cashew Crunch
