Harvest Fresh Riced Cauliflower and Broccoli Savory Muffins

    1/2 container Harvest Fresh Riced Broccoli

    1/2 container Harvest Fresh Riced Cauliflower

    2 medium Harvest Fresh Shallots, diced

    2 cloves garlic, minced

    1 egg

    12 tsp egg whites

    1/3 cup seasoned breadcrumbs

    1/3 cup shredded mozzarella

    1 Tbsp Italian Seasoning

    1 Tbsp Olive Oil

    Salt and Pepper, to taste

    Preheat oven to 400 degrees F
    Saute minced garlic with olive oil and shallots over medium heat until soft, around 5 minutes
    Combine broccoli, cauliflower, one full egg, breadcrumbs, cheese, Italian seasoning and salt and pepper in a large bowl. Stir in the cooked shallots and garlic
    Fill 1 dozen cupcake tray inserts with cooking spray or liners and distribute veggie mix between each cup
    Add 1 tsp of egg whites to each cup and then bake for about 25 minutes, or until each muffin is firm and golden on top
