Harvest Fresh Carrot Spiral Pad Thai

1 Pack Harvest Fresh Carrot Spirals
1/4 Cup diced Harvest Fresh Shallots
2 1/2 Tbsp toasted sesame oil (divided)
1/2 cup creamy peanut butter (Sunflower Butter works great too if you are avoiding Peanut butter, or want to try something new!)
1 Tbsp Soy Sauce
3 Tbsp Honey
1 Tbsp Rice Vinegar
1/2 Cup Coconut milk
2-3 sliced green onions (on a diagonal)
1 Clove Garlic, minced
2-3 Handfuls of bean sprouts (optional)
Juice from 1/2 a lime
Suggested Toppings: Sunflower Seeds, Chopped peanuts, Diced Red Cabbage, julienned daikon radish, cilantro and black sesame seeds!
- In a large measuring cup, or blender, combine 1 tbsp of sesame oil, peanut butter (or sunflower butter), Honey, Rice vinegar, Coconut Milk, and lime juice. Use an immersion stick blender or stand-up stationary blender to puree the sauce until smooth. Set Aside.
In a large saute pan over medium-high heat, add 1 Tbsp of sesame oil, shallots, garlic, and Harvest Fresh Carrot Spirals. Saute for about 10 minutes, stirring frequently until the noodles are soft, but not mushy.
Stir in the Pad Thai Sauce that was set aside, making sure to coat all the noodles evenly.
Add Green onions and bean sprouts if preferred, and cook for another minute.
Top the dish with your favorite toppings!
